The fruit maturity is 40-45 days from the flower bulb, or 30 to 35 days from the flower bloomed. When the fruit skin begin turning from green into RED, it is about ready for picking.

In Malaysia, fruiting season are year around. However during the raining season, the harvest could reduce from 30% to 50%.

For Export, we pick the fruit second day after dragon fruit skin turning into Red.
However for home grower, it is better to pick the fruit 4 to 5 days after the fruit skin turning into red.

Sweetness
of a fruit is one of the debating issues in fruit farming. Normally we mean sweet is on a measurement of Sucrose (C12H22O11), which is a combined molecule of 1 glucose and 1 fructose. However on analysis of Dragon Fruit (Pitaya), it does not contain of sucrose.

(Sucrose = 0%, Glucose = 5%, Fructose = 3%, and Sorbitol = 0.3%).
A 3 % of fructose is far more sweeter than 3% of sucrose.

Sugar Refractometer measure the refractive index (RI) as we call it sugar content or BRIX. As our measurement on Dragon Fruit, we normally get the BRIX of 12 to 19.
